Santa Fe Salad

2 cups of blacked eye peas, canned4 cups of peaches and cream corn, canned1 red pepper1/2 white or purple onion6 tbpd lemon juice6 tbsp olive oil3 tbsp cumin, ground
rinse peas and corn, add to glass bowl, slice red peppers and onions, add all other ingredients. You add or delete as much cumin as your prefer.
Refriderated 1 hour before serving.
Add salt and pepper to taste.
