Rice Noodles, veggies with peanut sauce

Ingredients
3 oz chicken breast cut up2 Tbsp creamy peanut butter1/2 Tbsp soy sauce1/2 tsp minced garlic1 tsp hoisin sauce2 oz rice noddles1 carrot1 red pepper
Directions
Heat 4 cups of water to boiling. Take water off heat and put in rice noodles for approximately 5 minutes and then drain the noodles.

Add peanut butter, soy sauce, garlic and hoisin sauce in a bowl and mix. Set aside.

Cut carrots and pepper. Place carrots in a pan and saute them, add peppers and continue to saute. Add chicken, rice noodles and sauce to the pan and stir fry.

Serving Size: Makes one
