1 lb Lean Ground Beef (90/10 or 98/3)1 6oz can Tomato Paste1 Package of Saltine Crackers (finely crushed)3/4-1 cup Green or Yellow Bell Pepper (chopped)1/4-1/2 cup Red Bell Pepper (chopped)1/2 Cup Onion (chopped)2 Large Eggs1 Tbsp. Butter or MargarineCooking SpraySalt & Pepper (optional)Tomato Ketsup (optional)
Preheat oven to 375*F.
Combine butter, peppers and onion in a medium, nonstick sauce pan and cook until tender.
While the peppers and onion are cooking...
Combine saltine crackers, eggs, and tomato paste in a large bowl. Stir until well combined. Add cooked peppers and onions and stir to combine. Add ground beef and mix with hands to combine. Do not over-mix once ground beef is added (a tough meatloaf will result).
Make tennis ball sized Mini Meatloaves and place in a greased 13"x9" pan (or a pan with sides) leaving at least a finger's width between each mini meatloaf. Season to tastewith Salt and Pepper (optional). Drizzle with Ketsup (optonal).
Place in a 375* oven for 45 Minutes to 1 Hour or until cooked through. **cooking times very from oven to oven.** Remove and let rest 5 minutes to redistribute juices. Serve.
