Swiss Broccoli Barley Soup

Ingredients
3/4 cup water7/8 cup chicken broth1/4 cup chopped onion1/6 cup pearled barley1/2 clove garlic, peeled and minced1 cup broccoli1/2 cup peeled, thinly sliced carrots3/4 cup milk, divided1/8 cup all purpose flour1/2 cup shredded Monterery Jack cheese
Directions
Combine water, chicken broth, onion, barley, garlic, salt and pepper in a large saucepan. Heat to a boil over medium high heat, stirring occasionally.

Reduce heat, cover and simmer 40 minutes, stirring occasionally. Add broccoli and sliced carrots. Simmer 15 to 20 minutes until vegetables are tender.

Whisk together 1/2 cup milk and flour in a small bowl until smooth. Whisk the flour mixture into the soup and simmer 5 minutes, stirring frequently, until thickened.

Stir in remaining 1 cup milk and Swiss cheese. Simmer about 5 minutes until cheese is melted. Serve hot.
