Egg Salad

Ingredients
Aioli:1 egg yolk1 tsp vinegar1 cup olive oilSalad:1/2 c. aioli8 hard boiled eggs, diced1 c. celery, diced1/2 c. onion, diced and soaked in water for 15 min.1 tbsp (or more) dijon mustardjuice of one lemon
Directions
To make aioli (mayo made with olive oil):
1. Whisk egg yolk, a dash of salt, and a dash of vinegar.
2. Working a very little bit at a time, whisk the olive oil into the yolk. Do not stop whisking! Whisk until it's all incorporated.

Salad:
Chop everything and mix together with the mayo/aioli.

Serving Size: makes about 8 cups
