Vegan Chocolate Chip Cookies

1/2 cup Coconut oil1 cup Brown sugar1/4 cup Almond or Soy milk1 tbsp Vanilla extract2 cups Flour (I used Wheat)1 tsp Baking powder1 tsp Baking soda1/2 tsp Sea salt1 cup Carob Chips
Pre-heat oven to 350 degrees
1. Cream together the liquid coconut oil & brown sugar then add the Almond milk & Vanilla extract.
2. In a separate bowl mix the flour, baking soda, powder & salt.
3. Combine the wet & dry ingredients then Carob chips.
4. Scoop about a tbsp sized balls & place them on ungreased baking pan.
5. Bake for 8-10 mins.

I made the recipe as is (except I used the 10 oz. pkg of Enjoy Life mini chips and didn't figure out the calorie difference). I doubled the recipe, used my cookie scoop and ended up with ~62 cookies, which puts the calorie count at ~97 (0.6 of a serving) My vegan grandson will love these!!! - 3/18/14
