Gluten free garbonzo pancakes

Ingredients
buttermilk:1-1/4 c. milk1 Tbsp rice vinegarLet Stand 10 MinutesPancakes:1 egg1.1/4c buttermilk2 Tbsp Butter (I used country crock calcium)Beat well1-1/4 c. Garbonzo Flour1/2 tsp Xanthan gum2 tsp baking powder1/2 tsp baking sodacombine all and beatstir in 1 tsp vanillaLet mix stand for 15 minutes it makes them so much better, and I don't understand why, but its the difference between perfect pancakes and tears.
Directions
Pour batter on griddle pre-heated to 300*F
use nonstick spray or butter
cook on one side until all the bubbles have popped and wholes takes their place.
Flip and cook another minute or so.

Serving Size: Makes 4 servings. Each serving is four 4" in pancakes.
