Brown Rice Mock Risotto

Ingredients
1 tsp olive oil1/2 cup chopped onion1 can chicken broth1 cup water1 1/2 cups brown rice1/4 c freshly grated parmesan
Directions
Heat the olive oil in a sauce pan. Add the onions and saute for a few minutes (don't let them brown). Add the chicken broth and the water. Bring to a boil. Add the rice, return to a boil. Reduce heat to low. Cover pan and simmer gently for 45-50 minutes. Check every once in a while to see if it needs more water. Taste for doneness after 45 minutes. When it's cooked to your liking, remove from heat and stir in freshly grated parmesan.

Makes 3 cups of rice.
