Mike's Heirloom Tomato Soup

Ingredients
1 Carrot Peeled and chopped1 Onion Chopped1 Stalk Celery Chopped1/4 C Olive Oil5 Garlic Cloves1/4 Tsp (or to taste) Red Pepper Flakes2 Lbs Heirloom Tomatoes cut into wedges2 Cups Water2 Tsp Kosher SaltExtra Virgin Olive Oil
Directions
Heat large nonreactive sauce pan. Add 1/4 Olive Oil. Add Carrot, Onion, Celery and pepper flakes and sautee until vegetables are fragrant and starting to color. Add Garlic and Sautee until golden. Add tomatoes water and salt. Simmer until tomatoes are tender, (20 minutes or so). Using an immersion blender, process soup until smooth. Allow to cool. Add to foodmill and remove seeds and peels. Return to heat and bring back to simmer. Serve warm in shallow bowls and drizzle with Extra Virgin Olive Oil.
