2 tbsp EVOO1 cup onion, chopped1 medium zucchini, diced1 can rotel2 cup sweet yellow corn, frozen1 can black beans, drained & rinsed2 Tbsp taco sauce
Heat EVOO in skillet over medium heat. Once hot, add onion and zucchini cook until soft, about 5-7 minutes.
Once onions are translucent, add corn, black beans, taco sauce & rotel to the pan. Mix ingredients well, cover and let simmer for another 10 minutes.
