Savory Quinoa Muffins

Ingredients
1/2 dry quinoa8-10 sundried tomatoes - if not jarred, rehydrate and chop 1/4 c. egg beaters1.5 oz feta cheese 1 clove garlic - minced1/4 red onion - chopped1 tbl parsleysalt / pepper to taste
Directions
Preheat oven to 350 and spray muffin tins with non-stick spray. Cook quinoa in 1 cup water. Add all ingredients in a large bowl and mix well. Scoop into muffin tins all the way to the top. Bake for 25 minutes. Let cool completely before removing or they could crumble.
