Apple Cinnamon Quinoa

Ingredients
1/4 Cup Quinoa1/2 Cup Water1/4 tsp Cinnamon1/2 tsp Vanilla Extract1/4 Cup Unsweetened Applesauce1 Tbs Craisins1 Tbs Chopped Pecans1/2 Gala Apple, or approx 6 slices, chopped
Directions
Combine Quinoa, water, cinnamon and vanilla in a small saucepan and bring to a boil. Reduce to a simmer, cover and let cook for 15 minutes until quinoa can be fluffed with a fork.
Stir in applesauce, craisins. Top with Pecans, cut apples and a dash of cinnamon.
