Ingredients
2 1/2 cups diced mango 1 1/2" piece peeled and grated fresh ginger 1 jalapeno pepper, minced 1 clove garlic, minced 1/4 teaspoon salt 1/2 cup vinegar 1/2 cup firmly packed light brown sugar 1/2 cup dried cranberries
Directions
Place all ingredients in a medium saucepan.
Bring to a boil, reduce heat to low, and simmer until thick, about 25 minutes, stirring often to keep from sticking.
Let cool before storing in an airtight container.

    I have always used Patek's mango chutney, this was a great opportunity to do it myself. I used little Thai peppers, though, for more authentic heat. - 3/22/18
