Ingredients
4 C chopped yellow squash4 C zucchini chopped1 C onion chopped1 C green bell peppers chopped1 14.5 oz can petite diced tomatoes1 C uncooked long grain white rice1.5 T sweet basil salt and pepper to taste
Directions
Makes 12 1 cup servings

Cook the cup of white rice according to the package directions.

In large pot add rest of ingredients and cook unitl tender. Add cooked rice and stir.**

***You may need to drain some of the water off the vegies before you add the rice. Depends on how much water is in the pot. The rice will soak a little water, but will become mushy if too much water is left in the pot.
