-Bean sprouts, 1.5 cup -Carrots, raw, 1 medium, chopped thinly or into matchsticks-Scallions, raw, 1 medium, chopped finely-Limes, 0.5-Yellow Capsicum, 1/2, chopped-Tofu, extra firm, 0.5 block, chopped into bite size pieces-Sweet Chilli Sauce, 1 serving -Cucumber (with peel), chopped thinly or into matchsticks-Bread crumbs
-Chop all veggies as necessary
-Mix and add in juice/ring rind from lime + sweet chillli sauce
-Roll tofu in bread crumbs
-Heat oil in pain and gently fry tofu
-Mix in with salad
Serving Size: Makes 1 dinner + small lunch or a large dinner
