8 oz soft silkened tofu 8oz ricotta cheese 14oz can nonfat evaporated milk 1.5tsp vanilla extract 3/4 cup sugar 1/2 cup lemon juice 2tsp plain gelatin
blend ricotta and tofu until smooth. stir by hand milk, sugar, and vanilla. over med. heat cook lemon juice until hot and add gelatin, stir until melted. fold lemon and gelatin in with the cheese and chill about 3 or 4 hours
