1-½ cups shredded Cheddar cheese (divided) 2 tablespoons all-purpose flour 1-cup skim milk 1 teaspoon Italian seasoning 1 clove garlic, minced ¾ teaspoon salt ¼ teaspoon pepper 6 medium-sized Best Choice Golden Butter potatoes scrubbed, unpeeled and cut into ¼-inch slices1 medium onion cut into ¼-inch3 tablespoons unsalted butter 2 tablespoons shredded Parmesan cheese Paprika to sprinkle on top
1. Preheat oven to 375°F. Coat an 8- x 8-inch baking dish with cooking spray.
2. In a medium bowl, combine 1-cup Cheddar cheese, flour, milk, Italian seasoning, minced garlic, salt, and pepper.
3. Arrange half the potato slices in the baking dish. Top with the onion slices. Pour half the cheese mixture over the potatoes. Arrange remaining potatoes in baking dish, and pour remaining cheese mixture over potatoes. Dot with butter, cover with parchment paper, and bake 90 minutes.
4. Uncover potatoes and sprinkle evenly with remaining ½-cup Cheddar cheese and the Parmesan cheese. Sprinkle with paprika and return to oven to bake 10 to 15 additional minutes, or until cheese is melted. Serve immediately.
