One Egg Omelete with Kale

Ingredients
1 large egg1 tablespoon of crumbled fresh Kale1 tablespoon of green pepper1 tablespoon of red pepper2 mushroom chopped1tbs olive oil
Directions
mix with fork one egg
put together in a bowl , Kale, peppers and mushroom
Heat a fry pan I used a cast iron one but the tablespoon of oil in turn heat to High then when hot lower to medium and add egg on the side of pan place vegetables and heat through throughly then when egg is cooked place in center and roll egg up and place on plate.
