Briana's Fried "Not Fried" Rice

Ingredients
2 cups Instant Brown Rice2 eggs, slightly beaten8 baby carrots1/2 cup frozen peas1/2 cup frozen corn1 celery stalk2 Tbsp Reduce Sodium Soy Sauce
Directions
Chop up celery and carrots. Set aside. Cook Instant Brown Rice according to package directions (about 7 minutes including boiling time). Once done, set aside. Heat wok pan (or fry pan) over medium-high heat; add eggs. Let eggs cook into an omelet. Remove omelet from pan. Add celery and carrots to pan; add water as needed until crisp-tender. Chop up egg omelet into small pieces. Add frozen peas and corn, rice and egg to pan. Add soy sauce. Mix together in pan and serve.
