Ingredients
La Victoria Enchilada Sauce, .75 cup (remove)El Pollo Loco, 6 inch corn tortilla, 6.75 serving (remove)rosarita refried beans, vegetarian, 1 cup (remove)*Kroger Lowfat Cottage Cheese, 0.5 cup (remove)Mori-Nu, Tofu, silken, soft, 1 slice (remove)Cheddar Cheese, .5 cup, shredded (remove)
Directions
Mix silken tofu and cottage cheese. Then, make 2 layers, lasagna style, in the following order: enchilada sauce, tortillas, beans, cottage cheese mixture, cheddar cheese. Top with a final layer of tortillas, enchilada sauce and shredded cheddar.
