Ground Turkey + Root Vegetable Stir Fry

Ingredients
Ingredients:Beets (2)Parsnips (2)Mushrooms (1/2 cup)Spinach (1 1/2 cup)Olive Oil (1 tbsp)Salt - dashGround Pepper to tasteBlue Menu Ground Turkey (1pckg)
Directions
- Preheat the oven to 400
- Peel and chop the the beets and parsnips. Then toss with olive oil, salt, and ground pepper. Put in oven
- Cook the ground turkey in a pan. When cooked set aside.
- Saute the mushrooms and spinach. When finished combine with the the turkey.
- After about 35-40minutes, remove the beets from the oven and toss with turkey mixture.
- Season with spices as you wish.
- Makes 4 lunches (I personally make this Sunday night for lunch Mon-Thurs).
