Quinoa Porridge

1/2 C. Quinoa1 C. Water1/2 tsp. CinnamonPinch Sea Salt, Coarse1/2 C. Rice Milk, Lowfat1 Apple, diced1/2 C. Blueberries1/8 C. Walnuts (or pecans), choppedAgave Syrup (Optional)
Add quinoa, water, cinnamon and salt to a small pot and bring to a boil (or cook in rice cooker). Reduce heat, cover and simmer for 15 minutes or until most of water has been absorbed (stove top). Add milk and simmer uncovered for an additional 10 minutes (or add milk when rice cooking is complete). Stir in apple (diced), blueberries, and walnuts. Cover and let sit 10 minutes before serving. Porridge will thicken during this time. If desired, drizzle agave syrup before serving. A great alternative to oats for breakfast.
