Banana Vanilla Oatmeal Pancakes (Vegan!)

Ingredients
1 1/2 cups oatmeal (old fashioned works best)1/2 cup whole wheat flour (or try a gluten free flour)2 tsp baking powder1 1/2 cups almond milk (Vanilla, unsweetened)2 bananas (the more ripe they are, the better the flavor)1 tsp vanillaoptional: 4-5 drops of Vanilla Creme Stevia (Sweetleaf brand)Tropical Traditions Coconut Oil for skillet
Directions
Instructions:

Place skillet on stove on med-high heat with about 1 tsp coconut oil to pre-heat
Toss all ingredients in your Vitamix or high powered blender (except for coconut oil and toppings)
Turn Vitamix on low and gradually move up to high and blend for about 10-30 seconds until smooth.
Pour batter into skillet and cook pancakes

This recipe made about 10 medium sized pancakes for me. Next time, I’ll try adding some different ingredients such as hemp seed, walnuts or chia seeds to increase the super-food value! I’m excited to try blueberries as a topping as well.
