4 Portabello Mushroom Caps .5 Cup Quinoa 1 tbsp Olive Oil2 cloves garlic, minced.25 cup Onions, chopped1 small Banana Peppers, chopped.25 cup Feta Cheese,crumbled ,
Preheat oven to 350. Heat olive oil in a pan. Take stems out of mushrooms and chop. Saute onion until clear, add chopped hot banana pepper, chopped mushroom and garlic. Meanwhile cook Quinoa according to package directions. Once done mix together and add crumbled Feta. Spoon into mushrooms and bake for 15-20 mins.
