Spinach Mushroom Omlet

2 Eggs1 Egg white1 c. Spinach, fresh2 mushrooms, small, chopped1 oz. Cheddar Cheese, shredded
Saute mushroom pieces in skillet sprayed with cooking spray. Add spinach to wilt. Remove from pan and set aside. Add beaten eggs to skillet and cook until firm flip over. Place cheese pieces on top to melt as underside finishes cooking. Place cooked vegetables on half of egg and fold other half over the veggies and cheese. Salt and Pepper to taste.
