Creamy Beef and Noodles

6 oz wide egg noodles10 oz lean boneless beef1 onion, thiny sliced2 C small white mushrooms1 Tbsp unsalted butter4 tsp flour1C low sodium beef broth1 tsp dijon mustard1/2 tsp paprika1/2 tsp salt1/4 tsp fresh ground black pepper1/4 C light sour cream
Cook noodles according to package and keep warm
Brown the beef in non stick skillet, transfer to plate. spray skillet with nonstick spray, saute onion and mushrooms til browned, transfer to plate with the beef.
Melt the butter in the skillet, then add the flour, cook stirring constantly til bubbling. Continue stirring, slowly add broth, then paprika, salt, and pepper. Cook stirring constantly, until thickened, stir in sour cream, then beef and vegies. heat thru. serve over noodles
