Pineapple Chicken

Ingredients
1 lb. chicken breast (cut into bite size pieces)3 Tbsp. Olive OilOnion Salt to tasteSalt to tastePepper to taste3 Green Onions1 20 oz. can pineapple chunks1 cup carrot slices1 Tbsp. Corn Starch2 Tbsp. Sugar
Directions
Heat oil in a skillet. Dice scallions and place them in the skillet with the chicken breast. Season the chicken with salt and pepper. Once the chicken is cooked throw in the carrots and cook awhile longer. Then poor in the can of pineapple chunks with the juice. Bring to a boil. Then throw in sugar and corn starch, stir and turn down heat to medium until the sauce thickens. Serve with rice.
