Cauliflower Maranca

Ingredients
1 large onion, chopped1 lb. sliced fresh mushrooms1 large head cauliflower, floreted1 box chicken rice-a-roni, prepared2.5 cups shredded cheddar cheesejuice of 1 lemon (3 tblsp.)1 tblsp. butter1 clove (1/2 tsp.) garlic, minced1 tsp.sweet basilsalt & pepper
Directions
Prepare rice-a-roni per package directions and set aside. Saute chopped onion, mushrooms, lemon juice and butter in large skillet. Transfer to bowl, leaving remaining drippings in pan. Add floreted cauliflower, minced garlic, basil and salt and pepper to taste to pan of drippings and saute. Combine all and bake in greased casserole or 9 x 13 pan, uncovered in 350 degree oven for 30 minutes.
