Curried Coconut Chicken

Ingredients
2 chicken breasts1 t salt1 t pepper1 1/2 T Olive Oil1 medium Onion, thinly sliced2 cloves garlic1 14oz can lite coconut milk1 14.5 oz can diced tomatoes1 8oz can tomato sauce3 T splenda
Directions
1) Season chicken breasts with salt & pepper
2) Heat oil and curry powder over medium heat for 5 minutes in large skillet, stir in onions and garlic. Cook another 2 minutes
3) Add chicken and cook on medium for 7-10 minutes
4) Pour coconut milk, tomatoes, tomato sauce and splenda into pan
5) Cover and simmer on low for about 1 hour

Serving Size: 6 servings; making 1/3 chicken breast each
