Broccoli Cheddar Soup in a Crock Pot

Ingredients
1 C chopped onion1/4 C unsalted butter1/3 C whole wheat flour1/8 t nutmeg1/8 t freshly ground black pepper2 C chicken broth6 C 2% milk2 16-oz bags broccoli florets, thawed4 C grated sharp cheddar
Directions
Place first 6 ingredients into a 5 quart crock pot and stir. Empty 1 bag of broccoli into blender; add 3 C milk. Process to desired consistency. Repeat with second bag and remaining milk, pouring the mixture into the crock pot. Dump cheese in. Stir thoroughly. Cook on low 4 hours.
