Ingredients
1 mission spinach burrito (or other variety)3 egg whites1 c. fresh spinach1/4 c. onion2 T red pepper (opt)1 slice american cheeseseason with salt and Mrs, Dash table blend
Directions
spray non-stick oil in a skillet and "fry" egg whites, spinach and onion an separate sections of the skillet. sprinkle on seasoning to taste

Turn over everything once.

Lay burrito on top to soften.

Lay burrito on plate and place all ingredients in burrito and fold.

place folded burrito in skillet to firm up shape. about 1 minute then flip for second side, 1 minute.
