Quinoa with Toasted Almonds & Cranberries (1/3 cup serving; 60g)

Ingredients
1/4 cup dry Quinoa, Organic Whole Grain1/2 cup Sliced Almonds1 cube Vegetable Bouillon1-1/2 cups boiling water1/2 cup Cranberries, dried, sweetened (Craisins)1 Cinnamon Stick1 Bay Leaf
Directions
• Take the measured sliced almonds and lightly crush them in your 'clean' hand as you sprinkle them into a medium-large pan for toasting.
• Over medium heat, stir and toast the almonds until golden. Add the quinoa and toast a few more minutes until quinoa begins to darken.
• Transfer the toasted quinoa and almonds to a 2-quart saucepan and add the remaining ingredients.
• Bring to a boil, covered, then reduce the heat to simmer for 20 minutes.
• Remove from the heat and allow to sit for 5 minutes. Fluff gently with a fork and serve.
