BBQ Pineapple Chicken & Veggies

Ingredients
Approx 2 pounds chicken breast1 large zucchini1 20 ounce can crushed pineapple in its own juice2 cups BBQ sauce (I use sweet baby rays)1 large red bell pepper2 large apples
Directions
place chicken in bottom of crock pot and cook on low for 2 hours with 1 cup bbq sauce. Flip chicken. Chop all vegetables and fruit and place over chicken. Cover with can of crushed pineapple and remaining cup of bbq sauce. Cook on low for an additional 4-6 hours. You want the vegetables to be cooked but not mushy!

Serving Size: makes 8 servings with about 4 ounces of chicken
