Onion pancakes

Ingredients
1/3 cup white flour1/2 teaspoon baking powder1/8 teaspoon salt1/2 tablespoon olive or canola oil1/3 cup buttermilk1 large egg2 tablespoons cilantro, chopped1 scallion, chopped1/4 jalapeņo (optional), diced
Directions
Mix all ingredients just until batter is smooth with an electric mixer or by hand with a whisk. Do not over mix, or your pancakes will be heavy. Heat a griddle on medium low heat brushed lightly with canola or olive oil. Ladle 1/3-1/2 cup of batter on hot griddle. Cook for 3-4 minutes, checking that underside is golden before flipping (edges may or may not bubble before flipping). Cook on opposite side for a another few minutes until golden.
