Apple Cranberry Chicken Salad with Blue Cheese

Ingredients
Chicken Breast (cooked), no skin, 4 ounces (remove)Blue Cheese, 1 oz (remove)Apples, fresh, .5 large (3-1/4" dia) (approx 2 per lb (remove)Cranberries, dried, sweetened (craisins), 0.25 cup (remove)*Peppers, sweet, red, fresh, .5 large (2-1/4 per lb, approx 3-3/4" (remove)*Dukes light mayo, 2 tbsp (remove)*Balsamic Vinegar, 1 tbsp (remove)
Directions
Chop main ingredients, mix in condiments, stir in blue cheese. Mound on bed of greens and add extra low-fat dressing if desired (I add 1 tsp. low-fat raspberry walnut vinaigrette). Add pepper to taste.
