Mushroom Beef Barley Soup

Ingredients
1 tbsp. olive oil1.5 pounds extra lean ground beef1 tsp. salt1 tsp. pepper1 large onion, diced4 cloves of garlic put through a press1 container, 26 oz. of Swanson unsalted Beef cooking stock3 cups water2 cups sliced carrots1 cup sliced celery, about 3 stalks1 12 oz. package Baby Bella mushrooms, sliced1 pkg. Pomi chopped tomatoes, no salt added.75 cup pearl barley1 whole bay leaf
Directions
Heat oil in large pot. Brown ground beef. Add chopped onions and garlic and saute until meat is browned. Add salt and pepper.

Add stock, water, tomatoes, celery, carrots, and mushrooms. Bring back up to a boil and then add barley. Bring back up to a boil, then turn heat down to a simmer, and cook covered for 45-60 minutes.
