Chickpea Noodle Soup

Ingredients
* Olive Oil, 2 tbsp * Onions, raw, 1 cup, chopped * Baby Carrots, raw, 18 medium * Garlic, 2 cloves * Mushrooms, fresh, 1 cup, pieces or slices * Thyme, ground, 2 tbsp * Rosemary, 1 tbsp * Pepper, black, 1 tsp * Vegetable Broth, 4 cup * Water, tap, 2 cup (8 fl oz) * Spaghetti, cooked (pasta), 4 cup
Directions
Preheat a soup pot over medium-high heat. Sauté the onions and carrots in the oil for about 10 minutes. Add the garlic, mushrooms, and herbs, and sauté for another 5 minutes. Deglaze the pot with the veggie broth. Add the 6 cups of water and the chickpeas. Cover and bring to a boil.

Once the broth is boiling, break the soba noodles into thirds and throw them in. Lower the heat to medium so that the soup is at a low boil. Cover and cook for 15 minutes, stirring occasionally.
