Enchilada Casserole in a Crock Pot

Ingredients
2 lbs. 93% lean ground beef2 cans cream of onion soup4 cans red enchilada sauce1/4 t salt12 whole wheat tortillas6 cups Mexican cheddar jack cheese
Directions
Brown ground beef. Drain. Mix with soup, enchilada sauce and salt. Tear tortillas into bite-sized pieces. Spray a 5-quart crock pot with cooking spray. Layer 1/6th of beef mixture, 1/6th of tortillas, and 1/6th of cheese into crock pot. Cook on low 6-8 hours.
