Tomato Gelee

Red Ripe Tomatoes, 1 cup cherry tomatoes Rabbit Meat, 5 grams Cilantro, raw, 1 tbsp Salt, 3 grams Pepper, black, 1 grams Granulated Sugar, 2 gramsGelatin Sheet 2 Each
Cut each tomato in half. Place in a mixing bowl. Add salt, pepper and sugar. Cover with syran wrap. Place ontop a pot of boiling water. Cook for 1 hour. Strain liquid through a kitchen towel. Put gelatin sheets in cold water. Once soft squeeze out water. Add to tomato water. Dissolve. Pour tomato water in desired cups or bowls. Cool in Refrigerator.
Cut rabbit meat into small pieces. Season with salt and pepper. Sear in a dry hot pan. Remove. Cool. Add cilantro leaves to the cooled bowls of tomato gelee. Add rabbit pieces. Cut gold leaf into 1cm squares. Place on the gelee. Pour an even layer of tomato water into the bowls to cover the garnish. Cool until they set.
