Cauliflower Faux Fried Rice

Ingredients
1 med head Cauliflower1/2 onion, chopped3 Cloves garlic1 egg, beaten1 T Sesame Oil1 T Low Sodium Soy Sauce3 Green Onions, chopped1/2 c. Peas, frozen1 T Olive oil
Directions
Grate cauliflower till consistency of rice, squeeze and drain as much water off as possible.
Heat olive oil in skillet, add onion and cook until translucent, add chopped garlic and stir fry 2 minutes.
Add the cauliflower, peas, and sesame oil, stir fry about 3 minutes. Push mixture to one side of pan, add beaten egg and scramble. When scrambled, blend in with cauliflower, stir in soy sauce and green onion. Remove from heat and eat.

Serving Size: Makes two servings.
