Dairy free German Apple Pancakes

Ingredients
- 1/4 cup of whole wheat flour- 1/2 cup white flour- 3/4 cup of Coconut milk (not canned)- 1/4 t. Salt- 2 medium apples, peeled and thinly sliced- 2 T. sugar- 2 t. Cinnamon
Directions
Lightly spray two round, 9 inch cake pans. Preheat oven to 400 degrees. Mix batter ingredients in a medium sized bowl (flour, eggs, egg whites, milk, salt). Peel and thinly slice apples, and spread them in a single layer in the bottom of the two pans. Split batter evenly between the two pans, pouring it over the apples. Sprinkle the cinnamon and sugar over the batter in both pans. Bake in preheated oven for 20 to 25 minutes until done.
