Spinach, Tomato, and Cheese Omlet

Ingredients
1 large eggsegg whites from 2 large eggs1/4 cup fresh spinach1 TBSP Ramano Cheese, grated2 grape tomatoes, cut in halfCooking spray
Directions
Spray a non-stick skillet with cooking spray and heat on medium-high heat. While skillet is heating whisk egg and egg whites until starts to get frothy. After skillet is heated, pour eggs into skillet. Place spinach, cheese and tomatoes on one half of the eggs. When egg are almost fully cooked, flip the uncovered half over the the other half. Cook until eggs are fully cooked.

Serving Size: makes 1 omlet
