Irish Potato Cake

1 cup Mashed Potatoes1 pound Icing SugarI medium Banana, fresh, 1 medium 1 tsp Vanilla Extract3 Eggs, fresh3 cups Flour, white2 tsp Baking Powder1 tsp Cinnamon
Preheat oven to 325F
Grease either 2 9" cake pans, or 1 large spring form pan.
Mix banana, potato, icing sugar together until smooth. Add vanilla, then eggs 1 at a time beating after each addition.
In another bowl mix flour and baking powder.
Mix flour mixture into potato mixture and mix thoroughly.
Add to prepared pan(s).
Bake for 45 minutes or until knife comes out clean
Serving Size: If using the large springform pan, serves 16 wedges
