1 1/2 lbs Boneless skinless chicken breast1 sm pkg Mission corn tortillas (40 calories each!!)2 Cans Rotel (undrained)2 sm cans chopped green chilies2 cans Fat-Free Cream of Chicken soup1 8oz. carton low-fat sour cream3 Cups reduced fat shredded colby-jack cheese1 sm can sliced olives (optional)
Preheat oven to 425 degrees. Boil chicken til almost done. Drain Chicken and set aside to cool. Lightly spray a 9 X 13 pan w/Pam. Shred Chicken; in a medium sauce pan combine all other ingredients (except tortillas & 1 1/2 cups of shredded cheese) stirring constantly til heated thru mix in shredded chicken til combined. Begin layering, tortillas first, chicken mixture then shredded cheese. Continue this process until all is gone or pan is full. Bake for 25-30 min. Let rest for about 5 minutes and serve! Makes approx 12 servings
