Vegan Spiced Carrot Cake Cookies

1 cup walnuts1 cup rolled oats1/2 cup raisins1/2 cup dried cranberries3/4 cup whole wheat pastry flour1 1/4 tsp baking powder1 1/4 tsp cinnamon1/2 tsp ground ginger2 carrots, grated1 apple, grated1 ripe banana, mashed1/4 cup unsweetened almond milk
Preheat oven to 350 F. line two baking sheets with parchment paper or silpat.
Combine walnuts, oats, raisins and dried cranberries in a food processor and pulse until finely ground. Transfer to a bowl and mix in flour, baking powder, cinnamon and ginger.
Add carrots, apple, banana and almond milk and stir until combined.
Drop by tablespoon one inche apart on the prepared baking sheets, making between 20 -24 cookies per sheet. Press each cookie with the back of a fork to flatten out. Bake until the tops and bottoms are browned and the center is no longer mushy, 20 to 25 minutes.
