Crockpot Chicken Italiano

Ingredients
4 Chicken Breast1 Can Diced Tomatoes (italian style w peppers for some kick if you prefer)1 can Crushed tomatos2 tsp Oregano2 tsp Basil1 tsp Thyme1 yellow onion diced4 cloves garlic, crushed2 cups cubed Zucchini2 Cups cubed Eggplant
Directions
Add All ingredients to Large Crockpot with Chicken on the Bottom followed by diced onion, crushed Garlic, cubed Vegetables and seasoning. Season with salt and pepper to taste. Top with Canned tomato products. Cook on High for 4-6 hours or low for 6-8 hours. Serve 1 breast per serving and divide sauce and vegetable into 4 parts. Serve Sauce and Vegetables over Whole Wheat pasta of your choice but don't forget to count that seperately. It is not included in this recipe calculations.

For Vegetarians, Skip the Chicken and add Garbonzo or Canellini Beans for a tasty twist. (or just add more veggies.
