Barley, broccoli, and walnuts

1 cup uncooked barley1 bunch (about 3 cups) broccoli, chopped3 cups chicken broth, fat free preferred1 cup onion, chopped2 cloves garlic, chopped1 can Garbanzo beans, rinsed and drained1-2 cups shredded cheddar cheese1/2 cup chopped walnuts
Preheat oven to 375 degrees. Place chopped walnuts in a pan and toast over low heat. Cook barley in 2 cups of chicken broth according to directions. While barley is cooking, saute onions and garlic in cooking spray or in a nonstick skillet. When barley is cooked, add onions, garlic, and beans. Pour in 1 cup chicken broth and cover. Let simmer for several minutes until liquid is absorbed. Place broccoli in a microwave safe dish and microwave until tender. Put cooked barley in a 9x13 inch casserole dish. Top with barley mixture, sprinkle with shredded cheese and walnuts. Bake at 375 degrees for 10-15 minutes.
