Greek Yogurt Hot Spinach Dip

4 cups chopped fresh spinach, loosely packed12 ounces plain Greek yogurt1/4 cup chopped green onions (can use yellow onion)3 cloves garlic, minced1 cup shredded part-skim Mozzarella cheese1/4 tsp. salt1/4 tsp. black pepper1/4 cup grated Parmesan cheese
Preheat oven to 350 degrees.
2Stir together first seven ingredients in a large bowl in a large bowl until evenly mixed. Transfer mixture to a small baking dish, and use a spoon to spread so that is is flat on top.
3Bake for 30 minutes, or until the cheese is melted and bubbly and the edges are slightly golden. Remove and immediately sprinkle with Parmesan cheese.
