Sweet Potato Hash

1 large sweet potato, cubed2 parsnips, cut into a 1/4" dice1/3 cup onion, diced2 tsp thyme leaves2 tbsp Extra Virgin Olive Oilsalt and pepper to taste
Heat a large saute pan over medium-high heat. Add olive oil and warm. Once oil is hot, add the onion and cook until slightly caramelized.
Add parsnips, sweet potatoes and thyme to the onions. Season with salt and pepper. Cook until potatoes and parsnips are softened and caramelized, about 8-12 minutes. Stir often.
Remove pan from heat and cover loosely with foil.
Transfer potatoes to a serving dish or dinner plates. Serve warm.
