1 head cauliflower3 Tbsp extra virgin olive oilSalt and pepper to tasteDrizzle oil over cauliflower and season with salt and pepper. Roast at 350 degrees for aprox. 35-45 mins.Lemon Caper Vinegarette Dressing:Whisk together2 tbsp. olive oil1 tsp. capers (chopped)couple sprigs parsley (chopped)Zest of a lemonJuice of a lemon1 tsp. Dijon MustardSalt and Pepper to taste.
Roast whole head of cauliflower on baking sheet for 35-45 mins. Whisk ingredients for vinegarette and pour over baked cauliflower.
